
Miso soup has so many great gut health benefits. It’s rich in essential minerals and nutrients and is a natural probiotic. Plus, it’s super quick & easy to make. We do our best to incorporate miso into our diet at least once per week, if not more often. Miso is a simple and natural way to improve overall gut health. Which can be so helpful when stress has manifested itself as an upset stomach. Last week was a super stressful week for us. We were feeling sluggish and our digestion was off. When this happens, we used to quickly get trapped into the cycle of traditional comfort food. We have now redefined what that looks like for us. Comfort food now is foods with a ton of flavor. The flavor, which comes from all the spices and seasonings, packs a huge nutrient dense punch. This helps the food taste great, but also helps in increasing our energy and balancing our digestion. This simple soup recipe is nutritious, satisfying and comforting. And makes a difference we can definitely see and feel! we hope you enjoy it.
Ingredients:
5 cups vegetable broth
2 sheets of nori (seaweed)
4 tablespoons of white/yellow miso paste
1 cup of firm tofu, cubed
Simple Steps:
Wrap the tofu in a towel and press firmly to release excess water.
Cube the tofu.
In a medium-sized pot, bring vegetable broth to a boil.
Add dried seaweed/nori.
Boil for 5 minutes.
In a separate bowl, mix white/yellow miso paste with some warm water to remove clumps - Remove pot from heat and stir in miso paste (you don’t want to heat it so you preserve the probiotics).
Eat it alone, or pair it with sushi or noodles!
